Lime and Herb Grilled Chicken

INGREDIENTS:

  • 6 Chicken Breasts with Bone and Skin (can use thighs or boneless/skinless)
  • Juice of 1 large Lime (or Lemon)
  • 1/2 Cup Olive Oil
  • 1 Cup Fresh Herbs (my fave is a parsley & tarragon mixture)
  • 4 Large Garlic Cloves
  • Salt & Pepper To Taste

INSTRUCTIONS:

Put the chicken in a bowl large enough so they can all lay in a single layer. Put the remaining ingredients in a blender or food processor and blend. Pour sauce over chicken and let marinade for at least an hour and up to 12 hours.

Heat grill and cook skin side up over low heat for 15 min. Flip and cook until chicken is cooked through. Can bake in preheated oven at 375° for 30-45 min.

Makes 4 servings
