1 tbsp oil

3 pounds boneless chuck roast

1 tbsp salt 1 tbsp chili powder

2 tsp garlic powder

1 tsp cumin 

1 tsp paprika

1 tsp pepper

1 lime

1.5 cups beef broth

½ cup fresh cilantro



Combine all seasonings and season roast on all sides. Heat 1 tbsp oil in instapot or in large skillet. Sear roast on all sides for about 1 min each side, then put in slow cooker. Cover with broth and slow cook for 8-9 hours. Shred meat with two forks (pull meat apart), and squeeze with juice of one lime. Top with fresh cilantro.
